Just My Size Sweet Potatoes

  • 1 whole sweet potato, cleaned and halved
  • 1 1/2 tbsp cheddar cheese
  • 1 cup pinto beans, drained and rinsed
  • salt and pepper to taste
  • Cooking spray

  • 4 oz butter
  • 2 lbs peeled diced sweet potatoes, boiled
  • 2 red apples peeled, cored and diced
  • 2 bananas peeled, diced
  • 4 oz orange juice
  • 4 oz half and half
