This brownie recipe is a sweet treat and a great alternative to other high-sugar and high-calorie brownie recipes. The black beans add bulk and fiber to this recipe and the applesauce makes the brownies moist.
Preheat oven to 350 degrees F, and grease a 9×9 inch square baking pan
Using immersion blender, purée the beans, oil and applesauce. Next add the eggs, cocoa, sugar, and vanilla. Melt the chocolate chips and add to the blender. Blend until smooth. In a small bowl mix together the flour, baking powder, and salt. Add to mixture and blend until it’s completely mixed. Stir in the remaining chocolate chips. Pour into prepared pan and bake until surface looks matte or dry (the very center may still look shiny and wet) about 25 minutes.
Let cool at least 15 minutes before cutting and removing from pan. Dust with confectioners sugar (optional) and use a cookie cutter to make a fun design!
*For a healthier option, skip the folded in mini chocolate chips and powdered sugar. It will still be tasty and sweet!
