Stage 4

This is a healthy recipe that the whole family can enjoy. Cooking the rice in broth adds flavor and iron to the meal.

  • 1 tsp olive oil
  • 1 whole medium-sized yellow onion, finely diced
  • 1/2 cup thinly sliced celery
  • 1 1/2 cups short-grain brown rice
  • 3 cups low-sodium chicken broth
  • 1 1/2 cups Anjou or Bartlett pears, peeled, cored and chopped into toodler-friendly sized pieces

Heat olive oil over medium-high heat. Add onion and celery and cook until golden. Stir in rice and broth and bring to a boil. Reduce heat to low, cover and simmer for 35 minutes. Stir in pears and cook for 10 more minutes, or until the rice is fluffy and liquid is absorbed.
Top with toasted walnuts and dried cranberries for the adults.

Recipe Yields: 4 Servings

Store in the fridge for up to 5 days, and reheat before serving.

In addition to iron, this dish provides Maganese and dietary fiber.
