This recipe is packed with veggies, flavor and bright colors.

  • 1/3 cup pasta, any fun shape your child likes
  • 1 cup asparagus, chopped
  • 18  grape tomatoes, cut in half
  • 1/8 cup red onion, diced

Creamy Chicken and Asparagus

When choosing asparagus, the skinnier the stalks, the more tender they will be.

  • 1 cup asparagus, chopped
  • 1/4 lb boneless skinless chicken breast
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/4 cup whole milk
  • 1/2 cup mild cheese – havarti, gouda, emmental (or whatever you have on hand)

Green Eggs and Ham

This colorful breakfast helps to add more vegetables to your child’s diet in a convenient way by mixing in spinach with eggs.

  • 1/2 cup fresh spinach finely, chopped
  • 2 eggs
  • 1 tbsp butter
  • 1 tbsp milk

Spinach Pizzazz Pizza

  • 1 naan flat bread, pita or focaccia (for thick crust lovers)
  • 1/4 cup red onion thinly sliced
  • 2 whole garlic cloves, minced
  • 1 tbsp olive oil
  • 1/2 cup fresh spinach, finely chopped
  • 1/3 cup grated mozzarella cheese
  • 3 tbsp ricotta cheese or 2 oz feta

Popeye Spinach Puree

  • 2 cup fresh spinach

Steam 2 cups of fresh spinach. Puree and serve to you little one. Alternative is to swirl
puree with fresh sweet potato puree or serve with a milk poached Dover Sole filet.

Recipe Yields: 2-3 Servings

Storage Time: 3 months in the freezer

No-Bake Apricot Bites

These apricot bites make a sweet and nutrient-packed snack!

  • 1 cup dried apricots, chopped
  • 1/3 cup dates, chopped
  • 1/2 cup oats
  • 2 tbsp almond butter, unsalted
  • 1 banana, mashed

Apricot Glazed Chicken

Glaze:

  • 3  apricots, diced
  • 4 whole dried apricots, finely chopped
  • 1 whole shallot, finely diced
  • 1 1/2 cup vegetable broth
  • 1 cup water
  • 2 tbsp white vinegar or apple cider vinegar
  • 2 tbsp sugar
  • 2 tbsp of apple sauce
  • 1 tsp all spice
  • 1 whole bay leaf

Apricot Wild Rice

  • 1/2 cup wild rice
  • 1/2 cup brown rice
  • 2 1/2 tsp chicken bouillon granules
  • 1/4 tsp nutmeg
  • 2 cup water
  • 3 cup fresh mushrooms, sliced
  • 3/4 cup dried apricots, chopped
  • 3/4 cup celery, chopped
